Manassas Restaurant Inspections: Up To 30 Violations At Eateries

Health inspectors found as many as 30 violations during recent inspections in Manassas and western Prince William County.

MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between July 10 and 17.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • There was an employee observed washing hands at the 3 compartment sink.
  • An employee donned gloves before washing hands to engage with food prep.
  • An employee was observed handling ready to eat food with bare hands.
  • In the main kitchen there was only 1 hand sink in the kitchen.
  • The hand sink in the bar area was being used as a dump sink, ice was in the basin.
  • A hand washing sign was not posted at the hand sink in the bar area.
  • At the hand sink in the bar area did not have individual towels to allow proper hand drying.
  • In the 1 door upright reach in cooler there was raw beef stored above raw fish.
  • The grill kitchen and the main kitchen did not have sink stoppers to properly wash, rinse and sanitizer dishes.
  • In the walk in cooler there was several containers of guacamole with fresh tomatoes dated prep on 7/8, pico de gallo marked prep on 7/8.
  • The menu has food items such as steak, eggs and hollandaise sauce made with raw shell eggs that can be served undercooked and or raw but were not marked with the consumer advisory disclosure and or reminder.
  • The establishment did not have a food thermometer to take food temperatures.
  • There were multiple containers of food that were not labeled with the name of the ingredient/food item inside.
  • Clean utensils were not inverted with handles up to prevent contamination.
  • There were no test strips for the Quaternary Ammonium and Chlorine chemical sanitizer solution.
  • The hand sink faucet handle in the grill kitchen was missing.
  • In the restroom that was used by females did not have a trash can with a lid.

  • Poor handwashing procedures observed.

  • A food employee was observed eating, smoking, or drinking in an area other than designated break area while preparing/handling food or contacting clean food contact surfaces.

  • Handwashing sinks are not properly maintained and are leaking and need repair.

  • Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit (raw eggs and raw chicken were stored on the top of ready to eat food in the walk-in cooler).
  • Observed the cutting board on the top of the prep cooler in need of cleaning.
  • This food establishment is using a noncontinuous cooking process and has not maintained written procedures approved by health department on site.
  • The prepared ready-to-eat (RTE) in the refrigeration unit is not properly dated for disposition.
  • The consumer advisory is not complete. The identification of the animal-derived foods by asterisking them to a footnote is missing on the consumer advisory.
