Manassas Restaurant Inspections: Fruit Fly Infestation

Several restaurants and schools around the Manassas area recorded violations during recent inspections from the county health department.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Sept. 20 and Sept. 26.

COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

    • Date inspected: Sept. 20
    • Total violations: 4
      • An employee was using the hand sink as a dump sink
      • The drink grate in the drink area was rusted, and no longer easily cleanable.
      • The floor throughout the kitchen was not smooth and easily cleanable due to missing tiles in various locations.
      • The walk in cooler did not have enough light sufficient for working in.

      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.

      • Observed reach in cooler unit with frost build up.

      • The following food item(s) cut tomato and lettuce were observed cold holding at improper temperatures using a calibrated food temperature measuring device.
  • Bob Evans Restaurant #259, 10830 Promenade Ln Manassas, VA 20109
    • Date inspected: Sept. 20
    • Total violations: 8
      • Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
      • Different types of raw animal foods such as raw chicken and raw sliced beef stored on the shelves in the walk-in cooler in such a manner that may cause cross contamination.
      • The equipment food-contact surface was observed not cleaned after clipboard and paper were stored on the surface.
      • The raw and/or undercooked foods provided on the menu on line do not provide a disclosure statement.
      • Employees observed working in the food service area without proper hair restraints.
      • Lip contacts of Cleaned forks and knives were observed unprotected.
      • The nonfood-contact surface of the of the outside of the dishwasher and the surfaces of the shelves for chemicals are not clean.
      • Observed the floor is not clean.

      • Ground beef roll was observed thawed in stand water in 3 compartment sink.

      • The light intensity is below 20-foot candles at the 3-compartment sink. Observed 8 Fc using a light meter.

      • Observed that hand soap was not provided at handwashing sink behind ice machine.
      • Flat of raw eggs stored over ready to eat food ( chips) in walk-in cooler (WIC).
      • Tomato salad was measured 45 F at walk in cooler
      • The prepared ready-to-eat (RTE) pre-cooked chicken and pre- cooked beef in the walk in cooler is not properly dated for disposition.
      • Employees observed working in the food service area without proper hair restraints.

    • Date inspected: Sept. 25
    • Total violations: 16
      • There was no verifiable employee health policy was not available at the time of the inspection.
      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
      • An employee had a open drink container in the coffee prep area that did not have a lid on it.
      • Employees were using the dump sink in the coffee bar area to wash their hands.
      • An employee was preparing a ready to eat bagel with bare hands.
      • There were no individual towels at the hand sink in the coffee bar.
      • The hand washing sink in the sandwich prep area was being used to wash dishes.
      • There was no hand soap at the hand sink in the coffee bar area.
      • A hand washing sign was not posted at the hand sink at the coffee bar hand sink.
      • The employees were washing dishes at the hand sink with soap only, not sanitizing. Also the 3 compartment sink was blocked and was not in use for employees
      • There were several cold holding units that did not have a ambient air thermometer.
      • There was a visible infestation of fruit flies at the 3 compartment sink.
      • There was bug electrocution device on the counter in the coffee bar area. There was a fly glue trap hanging in the sandwich prep area.
      • An employee was observed working with food without a proper hair restraint on
      • There were no test strips for the Chlorine chemical sanitizer solution
      • The inside shelving of the coffee bar refrigeration was soiled and was dirty to sight and touch.

      • Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.

      • An employee was observed working with food without a proper hair restraint on.
      • The shelving in the walk in cooler was rusted, not smooth and not easily cleanable/cardboard boxes as food containers. The reach in freezer shelving was visible dirty/debris. There were wet paper towels that were covering foods.
      • There was the shelves that hold pots and pants next to the prep sink is not smooth and easily cleanable.
      • There was plastic bags that were used as stoppers to hold water in the 3 compartment sink basin

    • Date inspected: Sept. 25
    • Total violations: 11
      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • There was no hand soap available at the handwashing sink behind in front of walk in cooler.
      • Raw egg was stored above ready to eat food garlic & raw beef at walk in cooler.
      • Pre cooked chicken measured at 104 F hot holding at improper temperatures in a bucket left outside on prep cooler unit front.
      • Ground pork measured at 47 F cold holding at improper temperatures at walk in cooler.
      • Improper methods used to thaw roll pork in stand water bucket.
      • Various bulk food ( sugar and flour) containers were not labeled properly with the common name of the foods stored within them in the kitchen.
      • The door gasket to the prep cooler unit front is in disrepair.
      • The diameter of the air gap between the water supply inlets and the flood level rims of the 3 compartment sinks is less than twice the diameter of the water supply inlet.
      • Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.

      • The cutting boards were heavily scratched and scored and not clean to the sight/touch.
      • The prep table and the metal rack where food containers and utensils rest are not smooth and easily cleanable.
