Manassas Restaurant Inspections: La Flor de Puebla Bakery, Bratworks

The Prince William Health District recorded violations at several facilities around Manassas, including La Flor de Puebla Bakery Cafe.

MANASSAS, VA — The Prince William Health District conducted inspections at several facilities around Manassas during recent restaurant visits. The most recently published inspections occurred between July 20 and July 26.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Bright Starts Daycare, 7800 Garner Dr. Manassas, VA 20109
    • Date inspected: July 21
    • Total violations: 6
      • No EHP present for each employee. Something may have existed in the past, but no records could be found.
      • No written process for an even or central location in order to find the process as well as procure the bodily fluid spill kit.
      • Employee had beverage in a cup without lid or straw.
      • Food prep employee seen drinking from cup with bare hands and not washing hands before placing gloves on before food prep.
      • HS in kitchen was marked as a "hand sink only", but nothing instructing employees to wash hands or how.
      • Dish washing machine is equipped to automatically dispense soap/sani, however, hose is visibly clogged with cleaning agent. Limited amounts of agent making it into the washing cycle.
  • Everbrook Academy, 11675 Chapel Springs Rd. Bristow, VA 20136
    • Date inspected: July 21
    • Total violations: 1
      • Hot water is not available in sufficient quantities to meet the peak hot water demands throughout the food establishment. Water temperature at the 3 vat sink was observed at 104*F.
  • La Flor de Puebla Bakery Cafe, 10460 Dumfries Rd. Manassas, VA 20110
    • Date inspected: July 26
    • Total violations: 15
      • The person in charge did not demonstrate their knowledge of correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
      • Person in charge is not ensuring that employees are not using proper methods to rapidly cool Time/Temperature Control for Safety foods.
      • This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • No disposable towels/dispenser were provided at the hand washings sink at the kitchen food preparation and serving area.
      • Observed sanitizing chemicals were stored in the 3 compartment food preparation sink.
      • The methods used for cooling were not adequate to facilitate cooling of the product from 135°F to 41°F within 6 hours: Tamales stored in a big container to be cooled in the walk in cooler, cooled boiled eggs cooling on the kitchen shelf, sliced tomatoes and cooked beans stored in covered containers in the walk in cooler.
      • The Person in Charge could not provide a food temperature measuring device.
      • A plastic container of raw rice stored under the food preparation area handwashing sink.
      • Observed Employees working in the food service area without proper hair restraints.
      • Food employees wearing jewelry (watch) on their arms.
      • The wooden shelving above the food preparation table are not approved for storing clean equipment.
      • There is no chemical (chlorine) sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
      • Observed a spray nozzle attached to a hose of the mop sink faucet, adding pressure to the mop sink vacuum breaker (backflow prevention device).
      • There is no refuse container at the hand washing sink station for used paper towel disposal.
      • Observed employee clothing and other possessions stored in areas that may contaminate food, food-contact surfaces of equipment, single-service items, or single-use items.
  • Bratworks, 10804 Haggle Court Manassas, VA 20112
    • Date inspected: July 26
    • Total violations: 2
      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
