MANASSAS, VA — The Prince William Health District recorded violations at several facilities around the Manassas area during the most recent round of restaurant inspections. The most recent round of inspections occurred between June 15 and June 21.
Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- chicken mixed with red pepper noted not being adequately cooled to prevent the growth of harmful bacteria on the dry storage shelves in the kitchen.

- The following food item(s) were observed to be unsound or adulterated: 1 Dented can of red gold tomato ketchup observed one on the shelves close to the walk in cooler, another dented can of "robusto style tomato strips one on the shelves in the middle of the kitchen, and another dented can of Nestle La lechera was observed on the same shelves.
- Raw animal food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE) : Raw eggs were stored above cooked hot dog in the draw cooler under the prep table in the kitchen.
- The following food item(s) is unsafe, adulterated, or not honestly presented and shall be discarded or reconditioned : 2 cans of tomato and one can of nestle condensed milk.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cut tomatoes, Mozzarella cheese, shredded cheese, and raw hamburgers were measured at 45 F. ( Corrected during the inspection : The person in charge moved and placed the food in the walk in cooler for proper cold holding).

- Hot dog in the 4 door refrigerator, and cut tomatoes on the cold holding line were observed at improper cold holding temperatures of 47 F.
- Food stored on the floor such as cooking oil / food stored less than 6" above the floor.
- Employees observed working in the food service area without proper hair restraints.
- The 4 door refrigerator is not maintained in good repair.
- The premises are not free of litter.
