Biscuit, Soup Concepts Join Pendleton Carry Out Co.

Homemade biscuits and soups will be new offerings at the Alexandria food incubator.

ALEXANDRIA, VA — Pendleton Carry Out Co., the incubator for emerging food concepts, is adding two concepts to its lineup on Friday, Oct. 18. Say hello to Freed’s Biscuit Company and 100 Bowls of Soup.

Freed’s Biscuit Company features scratch-made biscuits from Josh Freed. His biscuits made with Freed's own buttermilk have gotten him a following in Virginia. They previously available only at the Warrenton Farmers Market and select restaurants.

Offerings include a classic buttermilk biscuit with a side of maple butter, as well as a jalapeño cheddar biscuit, za’taar, lemon glazed blueberry. From 8 a.m.-12 p.m. biscuits and gravy; a bacon, egg and cheese biscuit sandwich; and house cured gravlax with chive cream cheese, tomato and red onion will be served. The menu is rounded out by Freed's version of shakshouka with schug, egg and feta cheese and a Beyond Burger with egg and cheese.

The other new food concept, 100 Bowls of Soup, comes from Herndon. The made-from-scratch soups are plant-based, gluten-free and dairy-free.
