Critical violation: Observation (CORRECTED DURING INSPECTION): Different types of raw animal foods stored in such a manner that may cause cross contamination as follows: raw chicken over raw beef over raw shrimp.
Non-critical violation: Observation: Person in charge unable to provide valid photo ID CFM license.

Critical violation: Observation (CORRECTED DURING INSPECTION): Raw animal food stored over ready-to-eat food in the refrigeration unit. RAW CHICKEN WAS OBSERVED TO BE STORED OVER READY-TO-EAT POTATOES IN THE DELFIELD 3 DR PREP COOLER.
Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: SLICED CHEESE AT 51F AND RAW CHICKEN AT 46F IN THE 3 DR DELFIELD COOLER. SLICED CHEESE AT 55F AND 61F IN THE COLD WELL BY THE GRILL. MILK AT 51F AND HALF-HALF AT 53F IN THE 1 DR FULL THROTTLE COOLER.
Critical violation: Observation (CORRECTED DURING INSPECTION): Observed the following ready-to-eat, potentially hazardous food being held for more than the specified time/temperature allowed: CHICKEN SALAD MADE ON JULY 30TH IN THE 3 DR DELFIELD PREP COOLER.
Critical violation: Observation (CORRECTED DURING INSPECTION): The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): CHICKEN PASTA SALAD, COOKED CHICKEN, SLICED MELON, SLICED MELON, COTTAGE CHEESE, SHREDDED CHEESE, AND BOILED EGGS AT THE SALAD BAR. THE ITEMS IN QUESTION WERE FOUND TO BE WITHIN PROPER TEMPERATURE COMPLIANCE. HOWEVER, THE CFM STATED THAT THE ITEMS ARE KEPT UNDER TIME AS A PUBLIC HEALTH CONTROL AND DISCARDED AFTER 4 HOURS.

Critical violation: Observation (CORRECTED DURING INSPECTION): The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: Lamb Kefta (118F), Rice (128F), Turkey Meatballs (128F) at the Front Service Line.
Non-critical violation: Observation (CORRECTED DURING INSPECTION): The following methods used for cooling were not adequate to facilitate proper cooling: Cooked Food items were kept inside the walk-in cooler on sheet pans withour monitoring time and not staring food items. The vegetables (i.e. tomatoes) were kept inside the container and covered with plastic and cover preventing the air flow in walk-in refrigerator and Turbi-Air 3-DR UC refrigerator.
Non-critical violation: Observation (CORRECTED DURING INSPECTION): The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: walk-in refrigerator (50F)
Non-critical violation: Observation (CORRECTED DURING INSPECTION): Pans and food storage containers were found stacked while wet after cleaning and chemical sanitization.
Non-critical violation: Observation: Observed the 3-vat sink area floor is wet due to the drain pipe not connected correctly.
Non-critical violation: Observation: Observed missing tiles along the along the walk-in refrigerator and prep sink areas which is lead to pooling water along those surfaces.
