Reston Restaurant Violations: Raw Tuna Getting Too Cozy With Radishes

Fairfax County reported violations at Not Your Average Joe's, Cosmos Cafe, and others according to inspections from June 1-6.

RESTON, VA — Fairfax County regularly conducts inspections of Reston restaurants. Reports are generally posted about a week after the inspection. Critical violation: Observation (CORRECTED DURING INSPECTION): Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees. OBSERVED NO HANDWASHING SINK AT EMPLOYEE BATHROOM.
