Reston Restaurant Violations: Rodent Feces At McCormick and Schmick's

Fairfax County reported violations at M&S, Sweetgreen, and Chefs Lake Fairfax Five, according to inspections from June 22-29.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Hard boiled egg (44F), ranch dressing (45 F) in top of DR Prep Cooler (Pantry). Milk at coffee station. (48F)

Critical violation: Observation (CORRECTED DURING INSPECTION): The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): TIME STAMP NOT PRESENT FOR ALL TCS FOOD ITEMS ON EXPO LINE.

Critical violation: Observation (CORRECTED DURING INSPECTION): The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without proper disclosure: KOBE BURGER ON DINNER MENU.

Non-critical violation: Observation: The cutting board(s) along the COOKLINE are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

Non-critical violation: Observation: OBSERVED NO HOT WATER AT HANDSINKS ALONG THE COOKLINE.

Non-critical violation: Observation: OBSERVED RODENT FECES ON CAN IN DRY STORAGE ROOM. CAN WAS REMOVED FROM PANTRY.

Non-critical violation: Observation: Observed that the FLOOR ALONG THE COOKLINE is in need of cleaning.

Critical violation: Observation (CORRECTED DURING INSPECTION): Observed the lack of an approved backflow prevention device on the water supply system. OBSERVED LACK OF BACKFLOW PREVENTION DEVICE AT HOSE BIB AT MOPSINK.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): There was no temperature measuring device located in the following cold or hot holding equipment: 4 DRW PREP COOLER (BACK), 4 DRW PREP COOLER (FRONT), OPEN DISPLAY COOLER (FRONT)
