Woodbridge Health Inspections: 26 Violations At 1 Location, 'Piles Of Old Food On Floor'

The Prince William Health District inspected several schools and restaurants around Woodbridge, including a location with 26 violations.

WOODBRIDGE, VA — The Prince William Health District conducted several health inspections around Woodbridge from April 27 to May 3. Inspectors found two restaurants with violations.

Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Fuddruckers, 14000 Foulger Sq Woodbridge, VA 22192
    • Date inspected: April 27
    • Total violations: 26
      • The person in charge did not demonstrate that he was performing the following duties: 1. Ensure that employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing; 2. Ensure that employees are using proper methods to rapidly cool time/temperature control for safety (TCS) foods; and 3. Ensure that employees are properly maintaining the temperatures of TCS foods during cold holding.
      • There is no Certified Food Protection Manager (CFPM) on duty during hours of operation as those employees with supervisory and management responsibilities have no certifications.
      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • This food establishment has not established written procedures for responding to vomiting or diarrheal events that happen in the facility.
      • A food employee failed to wash his hands after handling raw meats and changing gloves for the handling of ready to eat (RTE) foods.
      • There were no disposable towels available at the handwashing sink along the cookline or in the men's toilet room.
      • There was no sign advising employees to wash their hands posted at the handwashing sink along the cookline.
      • There was no soap available at the small handwashing sink along the cookline or at the handwashing sink near the 3 compartment sink.
      • Raw, shelled eggs stored adjacent to ready to eat (RTE) foods such as cheeses in the walk-in cooler.
      • The Hobart warewashing machine was found to be operating with a final rinse temperature of 120 degrees F. In addition, the irreversible registering temperature indicator (thermolabel) remained white, indicating that the surface temperature of the equipment did not reach 160 degrees F as required for proper sanitizing.
      • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: raw ground beef on the prep unit along the cookline.
      • Evaporator coil cleaner stored in food preparation area.
      • Spray bottles of chemicals near the warewashing machine unlabeled.
      • Pico de Gallo that was just made was found stored on top of the prep unit at 47 degrees F.
      • The wet wiping cloths along the cookline were not properly stored in the sanitizer bucket in between use.
      • Single service items like foil and plates were stored exposed, out of the original boxes, in the storage room for cleaners, maintenance equipment, etc
      • Single use paper/cardboard container being continuously used to scoop fries.
      • The following pieces of equipment were found in disrepair and not holding an ambient air temperature of 41 degrees F or below: the prep refrigerator on the cookline; the 4 drawer unit under the beef grill; the 2 drawer refrigeration unit under the chicken grill; the Traulsen 2 door refrigerator near the walk-in cooler.
      • The wash temperature measuring device on the warewashing machine was in disrepair and not capable of indicating the wash temperature as required.
      • The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: Traulsen 2 door refrigerator near the walk-in cooler, other pieces of equipment along the cookline and serving line.
      • The fixtures including the handwashing sink and toilet in the toilet room for female employees was unclean with large amounts of soil and debris build up.
      • The door to the employee toilet room for women was held open by a bucket and a cloth stuffed into the hinge to prevent it from closing properly.
      • The door to the toilet room for female employees is in disrepair and missing the door knob.
      • Various light bulbs throughout kitchen and hood system burnt out and/or missing.
      • There is a huge amount of debris build-up on the floors and walls throughout the kitchen. Piles of old food/grease could be observed on parts of the floor.

    • Date inspected: May 2
    • Total violations: 2
      • Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). (Corrected during the inspection) : The Person in charge removed the raw shell eggs away from the container of cooked bacon and placed them on the bottom shelves in the walk in cooler.
      • Employees observed working in the food service area without proper hair restraints.
