Zag Dining Announces New Coffee Partnership at Gonzaga University

SPOKANE, WA — Following Commencement weekend, Zag Dining at Gonzaga University will begin a transition in the John J. Hemmingson Center, replacing Starbucks with Spokane-based Thomas Hammer Coffee. The change reflects a strategic shift shaped by student feedback and a continued focus on strengthening community connections.

Students have expressed interest in a more local coffee experience, expanded food offerings, and gathering spaces that better support campus life. The new partnership is designed to respond directly to those priorities while creating a more flexible and sustainable operating model.

Thomas Hammer Coffee brings deep Gonzaga roots to the center of campus. Founder Thomas Hammer is a Gonzaga alumnus, and his return marks a full-circle moment as a student-founded business becomes a campus partner. The company’s growth has also been supported by Bud Barnes, who serves as a mentor and strategic partner.

The transition aligns with Gonzaga’s broader commitment to investing in alumni success while building partnerships that reflect the values of the University. By introducing a locally owned and operated coffee company, Zag Dining is strengthening ties to the regional economy and providing students with access to locally roasted coffee.

Starbucks will close immediately following Commencement weekend. During summer renovations, Thomas Hammer Coffee will operate temporarily out of the Qdoba location, ensuring continued access to coffee service on campus.

A newly redesigned main coffee bar is scheduled to open in the fall, offering an updated space for students to gather, study, and connect. Zag Dining is also evaluating order-ahead app options, with additional details to be shared as plans are finalized.
