Recipe: Breakfast Burritos!

Sharing is caring and I have another recipe to share!  As you may already know (sorry if I continue to repeat myself), I love finding recipes that are quick, simple and can stretch the dollar.  I also try and find recipes that can be altered to make healthier substitutions.

I found this recipe from a fellow blogger, Are We There Yet?.  She notes her inspiration came from The Pioneer Woman, who if you are not familiar, is another blogger with crazy awesome ideas and a fellow dog lover.  :)

Anywho, for us, majority of the ingredients  in this recipe we always have on hand and are staples on our grocery list.  So making these are extremely convenient.  This is a great make-ahead breakfast that you can freeze and then reheat as/when needed.  My husband and I love these breakfast burritos especially for the mornings you just can't quite get out of bed and are running a late for work.  Grab, nuke, eat and go!

But anywayyyy, here's our adaptation to these on-the-go breakfast burritos.......

INGREDIENTS

  • 1 lb turkey sausage
  • Small onion, diced
  • Green pepper, diced
  • Shredded hasbhrowns - In my opinion this is an optional ingredient, we include them but could totally do without.
  • Eggs - I usually use 8-10 eggs
  • Shredded cheese
  • Whole wheat tortillas
  • Milk
  • Salt and pepper
  • Saran Wrap
  • Large freezer bags (2)

DIRECTIONS

  • Dice the onion and green pepper; dice to a sizing of your liking.  Set aside.
  • Brown the turkey sausage.  I use my Presto Electric Skillet.  I seriously love using this skillet for this recipe.  Essentially one vessel to cook all my ingredients which means less dishes!
  • Once the turkey sausage is almost browned, I add the onions and green peppers.  Sweat those for 30 seconds or so...Remove the turkey sausage, onion and green pepper mixture.  Place in bowl and set aside.
  • Now if you decide to add hashbrowns, here is where I do it.  Once your above mixture is removed, add the shredded hashbrowns.  I don't normally add any additional oil and just use the remnants of the turkey sausage...
  • The hashbrowns will take several minutes to brown, crisp up and cook.  So in the meantime, I prepare the eggs...Several minutes pass, ensure that your hashbrowns are cooked and semi-cripsy.  Once they are finished to your liking, remove.  I add the hashbrowns to the same bowl that contains your turkey sausage mixture.  Set aside.
  • Now time to scramble the eggs...  Add eggs (8-10) and milk, mix and pour into skillet.  Scrambling the eggs takes only a few minutes. 
  • Right before they are thoroughly cooked, add the turkey sausage mixture and hashbrowns...
  • Mix the entire mixture for a couple minutes.  I like to make sure that everything is evenly combined and cooked through.
  • Let cool prior to rolling.  Usually about 5 minutes.  Another pro about the skillet is that it cools quickly.
  • Once cool, you can commence rolling...  I take a large spoonful and place on the tortilla, sprinkle cheese and roll your burrito.
  • Once rolled, I wrap each burrito individually in saran warp.
  • I continue rolling until your mixture is gone (duh, this is obvious).
  • I usually make anywhere from 15 to 20 burritos each batch - this can vary depending on how many eggs you use and how much "stuff" you decide put in each burrito.  It isn't an exact science, so you learn as you go which amount works best.
  • Once wrapped, I put the burritos in large freezer bags.  Store in the freezer until ready to eat!
  • When you need one, remove from the freezer and reheat.  For us, it takes about a minute in the microwave.  Keep in mind that cooking times may vary.
