Summer will over-ripen your bananas quickly. So, what do you do with them?
We love bananas in our house.
I feel like I go to the store every other day to buy just bananas. Not because we are eating so many, but because with the summer weather, they go brown so fast! I have some picky banana eaters around here who will only eat "the green ones."
So what to do with all the brown (ok, RIPE) bananas? You don't want to let them go to waste!
One great option is to peel them and freeze them for smoothies. And of course, you can always make banana bread, which I often do. But if you are looking for another idea, I have a great one for you: Banana Cake!
I have an amazing family recipe that I know you will love. This is a recipe my grandmother used to make, and her children, grandchildren and great-grandchildren still make it. It's delicious and it reminds us of family celebrations and good times.
Banana cake may sound boring in these modern times of fancy cake flavors and box mixes, but this one is anything but boring. It's got a wonderful dense texture and distinct banana flavor, and the home-made butter cream frosting, colored just exactly the right soft shade of pink, is the perfect compliment.
