Think a butternut squash is a funny looking doorstop or that beets only come from a can? Or that five servings a day is almost impossible! This hands-on cooking class we will learn how to make several delicious and nutritious vegetable based dishes. The menu will include roasted beet salad with goat cheese & almonds, butternut squash au gratin with blue cheese & sage, roasted eggplant tapenade and a crispy kale that tastes like you're eating potato chips! Be sure to come to class hungry as we will be eating what we make! 1 Class. Instructor: V. Matlock
