J Cheese and Wine Pairing Class: Bataille de Camembert

Let the spring cheese battle begin! This wine pairing class is focused on the many flavors of Camembert cheese.

J Vineyards & Winery’s Executive Chef Erik Johnson and Director of Hospitality Lindsey Auchter host an intimate class focusing on Chef’s favored cheeses, charcuterie, plus seasonal accoutrements and how to pair them with our wines.

Let the spring cheese battle begin! This wine pairing class is focused on the many flavors of Camembert cheese. Originating during the 18th century in Northern France, Camembert is a soft, creamy cow’s milk cheese offering many different flavor profiles. J Vineyards & Winery’s Executive Chef Erik Johnson and Director of Hospitality Lindsey Auchter will host this Camembert cheese-off as they compare and contrast several styles to seek the perfect J wine pairing.

Our Team

In addition to a background of working in highly acclaimed restaurants such as Charlie Palmer’s Dry Creek Kitchen and The Farallon restaurant in San Francisco, Executive Chef Erik Johnson has dedicated time outside of the kitchen to learn the art of cheese making with various Sonoma County cheese producers. With skills beyond his culinary expertise, Erik Johnson is a recent graduate of the WSET Advanced (Wine & Spirits Education Trust). Lindsey Auchter, AIWS (Associate of the Institute of Wine and Spirits) has a culinary background including a career as a wine buyer and restaurant owner and has also recently completed her WSET Level 4 Diploma. Join this dynamic duo as they will take your palate on a global excursion with cheeses from different regions, charcuterie and seasonal accoutrements, all perfectly paired with J wines.
