The Matheson is hosting a one-night-only chef's dinner on Friday with refined-yet-soulful twists.
HEALDSBURG, CA — Chef Jason Pringle, whose résumé spans Michelin-starred dining rooms and some of the most respected kitchens in the country, will bring his refined-yet-soulful approach to wine country cuisine to The Matheson for a one-night-only Chef’s Dinner on Friday.
Pringle, most recently executive chef of Hazel Hill at Montage Healdsburg and an alumnus of culinary institutions including Daniel, Le Bernardin, and Navio at The Ritz-Carlton Half Moon Bay, is celebrated for marrying classical French technique with pristine seasonal ingredients. His food is known for luxurious polish without pretense.
Friday's menu reads like a winter love letter to Sonoma, highlighting the region’s bounty through a series of meticulously composed courses, beginning with smoked sturgeon terrine accented by sunchoke, hazelnut, and Mt. Rose apple. The progression continues with rabbit paired with chestnut, salsify, and black trumpet mushrooms, leading to duck pithiviers layered with black truffle and Asian pear. Dessert brings the evening to a close with a Dulcey chocolate tart perfumed with citrus, licorice, and almond.

Designed as an intimate dining experience balancing richness and brightness, the prix fixe menu is priced at $195 per person, with an optional wine pairing available for an additional $95.
