Specialty wines expertly paired with extraordinary autumnal cuisine

Join the St. Regis Monarch Beach for an exclusive wine dinner experience with Napa Valley’s Silver Oak Cellars featuring specialty wines and extraordinary rustic cuisine.

Silver Oak Cellars Winemaker Nate Weiss and St. Regis Monarch Beach Executive Chef Frederic Castan have created a five-course progressive pairing menu with autumnal dishes expertly matched with exclusive wines from Silver Oak and Twomey Cellars.

Set against the stunning views of the Pacific Ocean, the event begins with a reception featuring canapés and bubbly. Dinner follows with dishes such as Atlantic sea scallops with autumn squash risotto and shellfish liquor espuma paired with Twomey Cellars 2013 Sauvignon Blanc, and the roasted prime rib cap with braised cheeks, mushrooms and truffles parsnip mousseline paired with a 2009 Silver Oak Napa Valley Cabernet Sauvignon and 2010 Silver Oak Alexander Valley Cabernet Sauvignon.

Tickets are $265 per person. The reception begins at 6:30 p.m., with dinner starting at 7:15 p.m. An overnight package is also available starting at $825 that includes a luxurious overnight stay and two tickets to the Silver Oak Wine Dinner on Friday, Nov. 14.
