Learn how to make traditional Japanese miso from scratch in this hands-on fermentation workshop in Lake Forest.
Move beyond buying miso at the store and learn how this traditional Japanese fermented food is made—and how you can successfully ferment and age your own at home.
During this 90-minute workshop, each participant will prepare approximately 1.5 kg of handmade miso using four simple ingredients:
<ul>
<li>
Soybeans
</li>
<li>
Rice koji
</li>
<li>
Salt
</li>
<li>
Water
</li>
</ul>
You'll learn the basic process of making miso, how natural fermentation works, how to care for your miso while it ages, and tips for avoiding common mistakes. 
<h3>🍶 Three-Miso Tasting Experience</h3>
The workshop also includes a guided tasting of three different handcrafted misos.
You'll explore how different beans and aging periods can change miso's flavor, aroma, color, and depth.
The tasting may include:

Yellow soybean miso
</li>
<li>
Red soybean miso made with rare Japanese beans
</li>
<li>
Chickpea miso or red bean (azuki) miso
</li>
</ul>
Miso will be served with prepared miso soup and fresh vegetables so you can experience the different varieties in a practical way. Tasting varieties may change based on seasonal availability. 
<h3>🎁 Take Home Your Own Miso</h3>
Each participant will take home approximately 1.5 kg of handmade miso, along with a fermentation guide and tips for aging it successfully at home. 
The class is fully hands-on, and each participant makes their own batch rather than simply watching a demonstration.
The instructor, Hitomi of KOJI &amp; More, was born and raised in Japan and has visited traditional Japanese miso breweries to learn more about natural fermentation and long-aged miso.
Family-friendly: No knives or stovetop cooking are involved. Children may participate with a parent or guardian.
Vegan: The miso-making process itself is naturally vegan. A vegan tasting option using kombu and shiitake dashi is available with advance notice.

A Japanese Vegan cooking class will be held on Saturday, November 7 at 1 PM at Taste Eatery in Lake Forest, focusing on plant-based Japanese cuisine through traditional fermentation techniques.
This class highlights how Koji and vegan Japanese dashi&nbsp;(soup broth) can create deep umami flavors without the use of animal products. Participants will gain practical skills for preparing Japanese vegan dishes that are both satisfying and approachable for everyday cooking.

1. Miso Soup with Kombu (kelp) &amp; Shiitake Dashi:&nbsp;A comforting miso soup made with plant-based dashi, highlighting the gentle sweetness of seasonal vegetables and/or mushrooms.
2. Japanese Cucumber Pickle with Salt Koji and Shiso [a.k.a. Tsukemono]:&nbsp;Refreshing Japanese pickles enhanced with salt koji and Shiso leaves, packed with probiotics and antioxidants.
3. Tofu &amp; Seaweed Salad with Sesame Miso Dressing:&nbsp;A light yet nutrient-rich salad, balanced with a creamy sesame-miso dressing.
4. Mushroom Takikomi-Gohan:&nbsp;A hearty mixed rice dish with assorted mushrooms, highlighting their deep umami and nutritional benefits.
5. Koji Amazake (pre-made dessert drink served with your meal):&nbsp;Taste a naturally sweet, nourishing dessert drink made with just koji and rice.
STATION SETUP: You will be cooking in teams! Groups of 2–3 will share their own station. Solo attendees will be paired with a partner. Larger groups (4+) will be split across adjacent stations to ensure everyone has plenty of elbow room to cook!

Experience authentic Japanese home cooking through a hands-on breakfast cooking class featuring dashi, miso, koji, and other traditional Japanese ingredients.
Start your Saturday morning with a cozy Japanese breakfast experience at Taste Eatery in Lake Forest.
In this 90-minute hands-on cooking class, participants will learn practical Japanese cooking techniques while preparing a traditional-style breakfast using fermented seasonings such as miso, salt koji, and soy sauce koji.
<h3>🍚 What You'll Make</h3>
Miso Soup with Traditional Awase Dashi Learn how to make Japanese soup stock from scratch using kombu and dried bonito flakes, then turn it into a comforting miso soup.
Dashi-Maki Tamago Make a soft, fluffy Japanese rolled omelet seasoned with dashi and koji.
Steamed Salt-Koji Salmon with Shiso Learn how salt koji can be used as a traditional fermented seasoning and prepare tender salmon using a gentle steaming technique.
Steamed Rice (served) Enjoy steamed Japanese germinated/brown rice as part of the complete breakfast.
Koji Amazake (served) Finish with a naturally sweet fermented rice drink.
There will also be an optional tasting of natto with soy sauce koji and ama koji for those interested in exploring more of Japan's fermented food culture.
