FAIRFIELD, CT — Several new businesses are preparing to open in the coming weeks, and will be serving up a variety of eats and treats this summer in Fairfield.

Post Oak Barbecue Co. is replacing the Brickyard Pub, which closed over a year ago, leaving the 2,700-square-foot historic brick building at 93 Post Road vacant. The new occupant, which promises authentic wood-smoked barbecue with a blend of Asian and southwestern flair, will host a grand opening event March 31.

“I’m a big fan of barbecue, so I can’t wait,” said Community and Economic Development Director Mark Barnhart, who confirmed the opening. “I think they’re going to do very well at this location, and we’re excited to welcome them to Fairfield.”

Also expected to open in the next few weeks is Bonkers Cupcakes, which will be located at 1618 Post Road, the former site of KL & Sam interior design. The bakery will offer customized cupcakes, and a delivery car stocked with sweets will serve customers’ late-night cravings, according to the bakery’s website.

“It will be a great addition to the downtown,” Barnhart said. “We’re excited to have them open here.”

For those who prefer ice cream over cake, Tabitha’s Ice Cream has plans to open this spring in the Trademark building at 665 Commerce Drive, where it will neighbor the new Sally’s Apizza location coming to town this summer. Tabitha’s already has a seasonal flagship store at Captain’s Cove Seaport on Black Rock Harbor, but will now also serve dairy and vegan ice cream, Micalizzi’s Italian Ice, and coffee and tea in Fairfield.

“They’ll be a great addition to the Commerce Drive area,” Barnhart said. “I think that area is certainly underserved as a market, so we’re excited to welcome them here and wish them much success in their new location.”

Also coming soon is Sophie’s Pizza & Bar, which will replace Brick + Wood in the Brick Walk. Sophie’s is owned by RGR Hospitality LLC, which also operates Molto, Malibu and Sinclair.
