Sally's Apizza Opening This Summer In Fairfield
The new restaurant in Fairfield is part of Sally's ongoing expansion and will be its third location in Connecticut.
FAIRFIELD, CT — An iconic Connecticut pizzeria has plans to open this summer in Fairfield.
Sally’s Apizza announced the timeline earlier this week on social media, after confirming in October its plans to bring the business to town.
The restaurant will be located in the Trademark building at 665 Commerce Drive, in the space formerly occupied by Barbacoa Smoke House, according to Fairfield Community and Economic Development Director Mark Barnhart.

“It’s always great to have additional dining options here in Fairfield,” he said.
Sally’s did not respond to emails seeking more information.

The new restaurant in Fairfield is part of Sally’s ongoing expansion and will be its third location in Connecticut. The business opened its second restaurant last fall in Stamford, in a 4,000-square-foot space featuring the same paneled interior and red-and-white brick pattern as the original Wooster Street eatery in New Haven.
Founded by Salvatore "Sally" Consiglio in 1938, Sally's is known for its signature tomato sauce and chewy, crispy, charred crust, according to a Sally's news release distributed at the time of the Stamford opening. Consiglio developed a dough formula that worked with a specific coal-fired oven design.
"He worked on different methods to shred the mozzarella and special techniques to apply the toppings," Consiglio's son, Bob Consiglio, said in a news release.
Sally’s still uses the same recipes, techniques and ingredients today, according to the news release.
With a Sally's location in Fairfield, residents won't have to leave town to sample both pizzerias associated with the decades-old question about New Haven pies: Sally's or Pepe's? Frank Pepe Pizzeria Napoletana already has an eatery in Fairfield.
“There is no shortage of quality pizza options in this part of Connecticut,” Barnhart said. “We’re excited to welcome them to Fairfield.”
In addition to its Stamford and Fairfield locations, Sally's, as of late last year, had plans to open restaurants in Norwalk and Wethersfield, the Stamford Advocate reported at the time. A Sally's location is also listed as "coming soon" on the website of the Woburn Village complex in the Boston-area city of Woburn, Massachusetts.
