Make Your Own Pastry: Eclairs

These eclairs can be filled with whipped cream, custard, cheese paste, or even chicken salad.

ECLAIRS

Ingredients:

½ cup boiling water

¼ c. butter or margarine (4 tbsp)

½ cup all-purpose flour

¼ tsp salt

2 whole eggs

Directions:

In a saucepan put water, butter bring to a boil. When all the butter is melted add all the flour and stir over medium heat until it forms a ball in the center of the pot. Remove from the heat and leave for 5 minutes. Add 1 egg at a time mix in well then add the 2nd egg.

Take mixture and place in piping bag and pipe 2 inches apart. Bake at 375 for 20 minutes. Cool and fill as desired.

Suggestions: whipped cream, custard, cheese paste, any meat or chicken salad.
