But why should we care about protecting our hair from the sun's rays during summer in the first place?

Why do we need to protect our hair? Your hair goes to the same places as your skin, so is weathered and damaged the same way. The top layer of your skin is replaced in 28 days. In this time, your hair will only grow about a quarter of an inch to a half of an inch. If your hair is an average length of 9 inches, the ends will be one and a half years old and will have lived through at least one summer. The ends, therefore, will be bearing old scars, so to speak, so it is important not to make them worse.
