My sister, always the food genius, came up with this crazy and delectable recipe.

Patties will never be the same…(or breakfast!)
Breakfast Banana Patties

1/2 cup cooked Brown Rice (I always have leftover rice in the fridge)
1/2 ripe Banana
1/2 tsp. Cinnamon
1/2 tsp. organic Coconut Oil
1/2 cup frozen Blueberries
Place a skillet on medium heat and add coconut oil to pan. Let heat until nice and hot.
While oil is heating, in a bowl blend rice, banana and cinnamon. Use a fork to break down the banana and to blend the rice in. When everything is well blended, use your hands to form 2 patties. If you find the patties are not forming together, add more rice. Place each patty into the hot skillet. Let sit until golden brown and crispy, then flip to other side. You want a nice coating on the outside to hold them together.
While patties are cooking, heat the blueberries in micro for 1 minute. Enough to release the juices.
Place patties on a plate and top with warm blueberries. Enjoy!
