Wolfgang Puck’s New Steakhouse Opens In Georgetown

Wolfgang Puck's luxurious steakhouse, Cut, opened in Georgetown's Rosewood Hotel this past weekend.

GEORGETOWN, DC — The latest in Wolfgang Puck’s chain of steakhouses made its debut this past weekend in Georgetown’s Rosewood Hotel. Cut replaces the hotel’s Grill Room and offers a fine dining experience complete with wagyu beef and a raw bar exclusive to the Georgetown location.

Cut will serve dishes including premium beef like beef cheek, Veal Holstein schnitzel and more, Eater DC reports. The raw bar features sashimi, oysters, and three types of ceviche. Andrew Skala, who worked alongside Puck for a year to create the restaurant, oversees the kitchen. Cut is completed by a revamped bar and lounge, called Cut Above, which offers panoramic views of the city.

According to Cut's website, both the menu and design draw inspiration from the surrounding Georgetown neighborhood and “reflects the unique spirit and sensibility of the Washington metropolitan area.”

The Source downtown is Puck’s only other D.C. restaurant, which has been around for 12 years. Cut also has locations in Beverly Hills, Los Angeles, Las Vegas, New York, London, Singapore, Bahrain and Doha.
