The Toasted Yolk Café, a full-service neighborhood eatery offering reimagined interpretations of traditional breakfast, brunch, and lunch classics, opened its first Florida location in Sarasota on Monday, February 6 at 3750 South Tamiami Trail.
The brand’s first restaurant in Florida is owned by Kelly Milton, the wife of Toasted Yolk Cafe co-founder Chris Milton. Kelly and her husband are both Florida natives. Kelly hails from Pensacola and the new location is nearby her husband’s hometown of Bradenton.
“As Florida natives, it is a special feeling to bring this unique concept to our home state,” said Kelly Milton.
Having worked in the restaurant industry since she was a teenager, Kelly met Chris years later when she was working as a restaurant manager. Over time, Kelly moved away from involvement in the restaurant business. She and Chris started a family, and she became a faculty member of Body Arts and Sciences training Pilates instructors around the country. She also owns a Pilates studio. But the pair always dreamed of opening a restaurant together one day.
In the meantime, Chris and his business partner, Mathew DeMott, started Toasted Yolk Café in Houston in 2010 after noting a dearth of local upscale breakfast options. Their idea was to offer an alternative to greasy spoon diners. The Toasted Yolk features better-breakfast options, a chef-driven menu, a lively environment with flat-screen TV’s, and a happening bar scene. It was an instant hit in Houston, and ten more locations soon opened. The partners knew they were onto something big and began franchising in 2017.
As Toasted Yolk expands into a nationally recognized brand, moving beyond the South Texas region into new territories, they’re looking for franchisees to be brand ambassadors as well as owners. It just so happens that the first franchisee in Florida is Kelly Milton.
“We have already received a warm response from customers in the area,” she said. “I think they’ll love the Toasted Yolk’s made from scratch breakfast, brunch, and lunch menu offerings, along with our full-service bar.”

The new Sarasota Toasted Yolk Cafe location keeps the spirit of the former occupant, the Irish 31 Pub, alive and well, featuring a full-sized bar, as well as indoor and outdoor dining. The outdoor patio seats 42 people and also welcomes pets. The brand is known for its commitment to unwavering food quality, farm-to-table freshness, and unmatched service.
Their family-friendly, upscale atmosphere helps to set the Toasted Yolk apart. So does its breakfast, brunch, and lunch focus where diners can have morning eggs and coffee, savory pancakes and cocktails at brunch, and salads, soups, and sandwiches mid-day.
The restaurant’s grand opening event was held on February 10 and helped raise funds for the Sarasota County Animal Services. Ten percent of the net sales for the day went directly to the organization, as they helped raise a total of $510.
“Our youngest son, Brayden, is obsessed with animals and this charity seemed like a great fit for us,” said Kelly. “He wanted to make sure our outside patio was pet friendly, so he added dog bowls and water dishes.”
At the Toasted Yolk Café, breakfast and brunch aren’t just for weekends. Open daily from 7:00a.m. to 3:00 p.m., Toasted Yolk serves breakfast, brunch, and lunch daily. The bar, with an extensive drinks menu, is the centerpiece of the restaurant. The Toasted Yolk Cafe is Sarasota’s new destination for quality food and a great vibe.
