Observations: No active managerial control. Violations for hand washing, proper drinking, using a hand sink, hand washing facilities supplied, cold holding, cooling (amongst other good retail practices) were observed today. Two employees changed gloves to work with food without washing their hands. Employee drink stored on line shelf, above food in the cold-top cooler. Employee drink, in an unapproved multi-use cup with no lid & no straw, stored above clean utensils at the service station. Drinks discarded. Spatula stored in the prep area hand sink. Whisk stored on the hand sink/splashguard. Green scrub pad stored in the bar hand sink. Employee dumped his drink cup into the line hand sink. Items removed from all hand sinks; employees stopped misusing the hand sinks. No paper towel provided at the bar hand sink. Cold-held potentially hazardous foods not maintained below 41F; no time controls/documentation in place. Cooked potentially hazardous foods not cooled from 135F to 70F within 2 hours. Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.) Food cooling in covered containers, in deep containers, below food held cold in the walkin cooler, in containers stacked 3 high, etc. In-use utensils improperly stored at cookline. Scoop handle stored touching food; utensils stored in the sanitizer bucket. Scoop put into the dipper well; the other utensils taken to the dish area to be cleaned. Food containers in-use were broken/cracked & therefore no longer smooth and easily cleanable. Old stickers, sticker residue left on in-use food containers & on food containers stored clean.

Observations: Employees entering the rear of the building to work in the kitchen without first washing hands and employee washing hands with water only. Raw beef stored over cilantro, plantains & avocado & raw shell eggs stored over cheese dip. Items were re-positioned. Equipment/utensils being washed/rinsed but not sanitized. Potentially hazardous foods cold holding above 41 F Deli ham and hot dogs that were held (opened) over 24 hours were not date marked.
