Observations: PIC is not perfoming responsibilty. Observed an employee drink in a glass with no lid or straw at sushi bar and bottled water near clean dishes on server station. Quail eggs were below sauces and they had leaked onto them. Sauce discarded. Shrimp was on top of rice. Chicken improperly stored with beef. Several items not holding at correct temperature. Fuel for the warmers, cigarettes, and burn cream were all stored above food and plates. Shrimp and fish sitting in standing water to thaw. Food moved to walkin cooler. Wet cloth with rice in hot holding unit. Paper towels placed under multiple food items. Foods shall not be stored with cloth and paper towels. Hose attached to faucet below warewashing sink (bottom left) without a blackflow prevention device installed. Garbage drain plug is missing.
