• Dried food residue observed on slicer that is used every 3-4 days. Clean and sanitize before use.
• Refrigeration unit (prep cooler) in front area ambient at 44°F. Smaller unit not working. Adequate refrigeration needed in this area to maintain Time/Temp Control for Safety (TCS) foods at 41°F and below. Prep cooler unit temp to be adjusted.
• No accurate thermometer in storage upright coolers. Ensure there are working, accurate thermometers in all coolers.
• Front prep cooler has excessive water standing in bottom of unit. This must be repaired. Also, replace broken cooler gasket on reach-in freezer.
• Excessive grease buildup on equipment at fryer, interior fan grates of coolers and interior doors of front prep cooler. This must be cleaned. Canister used to transport used oil is heavily saturated with grease. If canister cannot be cleaned, it must be replaced.
• Replace closer on women's restroom door.
• Floors under equipment in front area and back kitchen must be cleaned.
