Cherokee Schools Announces Recipe Contest Winner
The recipe for "Southern okra corn salsa" won the third Cherokee Schools' parent recipe contest.

CANTON, GA — Creekview Zone parent Brittany Dean's "Southern okra corn salsa" won over the judges' taste buds and made her the winner of the district's third parent recipe contest.
Dean, who has children at Macedonia Elementary School and Creekland Middle School, won a $100 gift card from contest sponsor Credit Union of Georgia, and her recipe has been featured on school lunch menus during October.
The recipe contest, which highlights a different vegetable each year in honor of Farm to School Month, drew two dozen entries this year with its "Livin La Vida Okra" theme.

The recipe:
- 1 can of corn, drained
- 1 can of Rotel tomatoes with chilis
- 1 pound sliced okra, fresh or frozen
- 1/2 teaspoon of salt
- 1/4 cup of lime juice
- 1 teaspoon olive oil
- Cilantro to taste
- Tortilla chips
Heat oil in saucepan over medium heat. Add tomatoes and okra to pan and cook for 15 minutes, stirring occasionally. Add corn and turn heat to low and simmer an additional 10 minutes. Remove from heat and add lime juice and cilantro. Mix well. Serve with tortilla chips.
