- Observed food carried outside uncovered (cooked brisket) and cooking utensils also stored outside at smoker. Exposed food cannot be transported outside unprotected and cooking utensils must not be stored outside. Education provided to PIC on-site. New Violation.
- Food residue observed on meat slicer stored as clean under prep sink. Was disassembled and cleaned/sanitized on request. Can opener had heavy food buildup and was also taken to dish area for cleaning. Corrected On-Site. New Violation.
- Time/Temp Control for Safety (TCS) food items in prep units at temps above 41°F (sausage, crab cake mix, spinach dip, tomatoes). Items discarded/relocated to walk-in. Corrected On-Site. Repeat Violation.
- Cooked collard greens in walk-in at 48-50°F after cooling overnight. Greens were discarded. TCS food must be cooled from 135-70 in 2 hours and from 70-41 in 4 hours. New Violation.
- Cutting boards on prep units are heavily scored and must be resurfaced or replaced (food is cut directly on boards). New Violation.
- Floors and walls in disrepair in many areas and must be repaired; steam from high temp dish machine causing mildew accumulation on shelving in kitchen. This must be cleaned. New Violation.
