• Observed cloth sanitizer at 0 ppm and must be 200 ppm of Quat sanitizer. The manager corrected cloth sanitizer with fresh Quat solution.
• Bar dish machine not providing sanitizer. The manager corrected at 100 ppm of chlorine sanitizer.
• Observed sausage not dated. The manager corrected and dated sausage with a seven day discard date.
• No chlorine test with build up and must be provided.
• Ceiling vents with build up and must be cleaned.

• Observed a build-up of some sort of black stuff inside and on the kick-plate of the ice machine. Must clean and sanitized ice machine.
• Observed raw salmon slacking in the reach-in cooler #2 at 45 degrees fahrenheit. Management must ensure all equipment is working correctly cold foods must be stored in 41 degrees or below. Management discarded the salmon.
• Observed several cooling units within the restaurants are in poor repair as evidence the gaskets are torn around the doors.

• Observed a build-up of food stuff inside and outside of the reach-in-cooler. All cooler must be clean and sanitized.
  
• Observed build-up of food stuffs between and behind the equipment. Management must ensure Restaurant is clean as possible.
