The Cherokee County Environmental Health Department conducted food service inspections April 13-20 at the following establishments:

• Observed 2 different employees, on multiple occasions, bring soiled dishware from table into kitchen, dump waste in trash and fail to wash their hands after handling soiled plates, utensils. Employees must be properly trained on when to wash their hands. Discussed violation with PIC.
• Person In Charge (PIC) did not have access to employee health policy which describes symptoms and illnesses of employees that must be reported. PIC is responsible for being knowledgeable of the policy.
• Observed large container of salsa on ice at front drink station at 46F and individual portions in melted ice at 53F. Individual portions discarded, ice bath was correctly prepared for the large container.
• Observed 2 containers of cooked cheese dip in walk-in at temps of 47, 48F after being cooked the previous day. After cooked, time/temp control for safety foods must be properly cooled from 135-70 within 2 hours and from 70-41 in an addition 4 hours (6 hours total). Cheese dip was discarded. Corrected On-Site.
• Bulk grease/oil collection bin not sitting on washable surface. Bin placed directly on grassy area and congealed oil observed on ground surrounding bin. This must be cleaned up and bin placed on concrete surface in dumpster area.

• Observed food-contact surfaces not cleaned after being contaminated. Must ensure all food contact area are maintain clean and wholesome.
• Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures.
• Observed food containers were stored and stacked wet. Must ensure that all food containers and equipment are properly air-dried before stacking and storing.
  
• Observed the walk-in freezer was missing a light and ice chunks were on the deck. must ensure all equipment is in good repair.
• Observed the floors and wall around the equipment is soiled with food stuffs. Must keep floors and the walls around coolers and other equipment clean.
