The Cherokee County Environmental Health Department conducted food service inspections June 22-29 at the following establishments:
Canton House (Food Service Inspections)*

View inspections:June 22, 2016 Score: 86, Grade: B
- Observed open top employee drink on prep cooler. Drink was discarded. Employee drinks must be in container with lid and straw and be stored appropriately away from food prep. Corrected On-Site.
- Cooked pork products, which are cooked weekly, have no dates. Cooked pork must be date marked.
- Wide mouth, spoon-dip mustard and duck sauce observed on tables. These containers do not provide adequate protection of condiments and cannot be used for customer self-service.
- Gaskets on reach in units are torn and must be replaced.
- Heavy build-up of food grime on doors of reach in units must be cleaned. Dish racks are coated with brown film and must be cleaned to remove build-up or be replaced.
- Facility cleanliness it kitchen around and under equipment is poor. Buildup of dirt and grease observed in many areas. Establish a routing cleaning procedure for establishment. Replace missing tiles in mop basin.

- Observed flat of raw eggs (some eggs cracked) sitting on top of ready to eat salad dressing and also above tomato sauce in walk-in cooler. ?Three broken eggs observed on back shelving also. Raw Time/Temp Control for Safety (TCS) times must be stored properly and not over RTE foods. Eggs were discarded (also out of temp) and racks cleaned. Corrected On-Site
- Observed food build-up on meat slicer, which had not been used all day; observed black buildup on potato puncher; observed tongs used for cooking stored in hand sink which was soiled with food buildup; also observed pizza peels stored with food contact surface on the floor. All items were taken to dish area or broken down for cleaning. Corrected On-Site.
- Walk-in cooler at 50°F and all food items also at ~50°F. Multiple TCS foods discarded. Raw meat items relocated to keg cooler. Both reach in cooler units on line also holding temps at ~45-50°F. Multiple TCS foods were discarded. Raw meats were iced. Ice baths set up to keep prep items at 41°F and below. Technician arrived at establishment during inspection to service units. Corrected On-Site.
- Several prepared TCS food items in walk-in either past expiration date or not date marked. Items were discarded.
- Area around pizza oven where wood is being stored is unacceptable. Cleanup must be improved in this area. Food and grim buildup along wall edges and under equipment was observed. Cleanup must be improved. Ceiling tiles must be reinstalled above pizza oven. Carpet in upstairs liquor storage not approved. Must have a washable floor in this area.
