  • Food items on line not covered during slow operating times. Keep items covered (bacon, croutons, herbs, other items not under shelving). Sauce in walk-in on low rolling rack cooling without overhead (loose) cover. Recommend wax paper as loose cover.
  • Observed food residue/encrusted buildup on meat slicer, can opener, and potato peeler. Food equipment must be cleaned thoroughly and routinely after use. Observed wipe cloth used to wipe off chef knife used for ready to eat items after being used to wipe up drippings from raw hamburger patties. Person-in-charge (PIC) was instructed to take chef knife to dish area for proper cleaning and sanitizing. Use separate cloth buckets for wiping food contact surfaces of ready to eat (RTE) foods and for wiping surfaces where raw meats have been. Do not lay clipboards on cutting surfaces.
  • Multiple Time/Temp Control (TCS) items in grill drawer at temps of 50-54°F. Raw fish/seafood items discarded. Raw beef/chicken items relocated. Sauteed onions on counter at 81°F discarded. Cold, TCS foods must be held at 41°F or below (technician arrived during inspection and found problem with coils in unit).
  • Time system implied for par-cooked potatoes, but no times on item (at 65°F) and written procedure does not include directive for using time system. Use time sticker and modify procedure.
  • Remarks: Obtain disinfectant for norovirus in case of illness event; recommend reading pages 29-35 of GA Food Code 511-6-1 in reference to duties of PIC (can be found at website provided); improved cleanup needed around water heater and throughout kitchen (general); and recommend using (separate) tongs for raw meat, chicken, fish items at grill.

  • Multiple items not covered in storage in walk-in units. Items in storage must be covered.
  • Multiple Time/Temp Control (TCS) for Safety food items prepared and held more than 24 hours not date marked w/7-day discard. These items must be marked with date of preparation.
  • Several bulk spices removed from original container not relabeled when placed in different container. Label spices/sauces that cannot be easily identified.
  • Shelving on tables in disrepair. Door gaskets on coolers in disrepair. Continue making needed repair to equipment.
  • Door gaskets on reach in unit not maintained clean. Door handles of equipment have buildup and must be cleaned and maintained clean.
  • Continue making needed repairs to floor/walls throughout kitchen.
