  • Observed employee coming in from outside the restaurant and fail to wash her hands before handling clean equipment. The manager corrected and hands properly washed.
  • Observed build up between and behind equipment and must keep restaurant clean.

  • Sanitizer cloth bucket on main cook line at “0-10” ppm cl. Bucket was reset to 100ppm cl. Cloths being used to wipe down food contact surfaces must be maintained at proper sanitizer levels. Corrected On-Site.
  • Dish machine pressure gauge reading 40-45 psi during final rinse of machine. Service was called for machine to adjust pressure or re-calibrate gauge. Pressure during final rinse must be between 15-25 psi.
  • Steamed veggie mix and dice tomatoes in ice well unit at stove top at 46-48°F. Product was relocated to drawer unit. Tomatoes (sliced) in pans in salad unit bottom portion at 52°F. Tomatoes (6 pans) were relocated to walk-in cooler. Service was called for unit.
