The Cherokee County Environmental Health Department conducted food service inspections Jan. 3-10 at the following establishments:

  • Person in charge lacks awareness in key areas of risk factor control or good retail practices for establishment. CA: Persons in charge, managers or CFSM must be properly trained or retrained.
  • Observed employee eating and drinking while packing soy sauce. Corrected onsite by moving away after telling him that he is not supposed to eat while packing the food.
  • Observed improper horizontal and vertical separation of raw from raw and raw from ready to eat foods. Corrected onsite by rearranging the foods. The higher the cook temperature the lower it must be stored.
  • Observed food stored uncovered in the walk in cooler and in the kitchen. Corrected onsite by covering with lids.
  • Observed potentially hazardous food such as noodles, fried chicken, cooked chicken not date marked. These foods will be used for 2 to 3 days. Corrected onsite by writing dates and discarding the foods that have expired.
  • Must label the sauces and spices.
  • Observed fried chicken left for cooling at room temperature on the food preparation table. The temperature is 138 degrees. Corrected onsite by putting the chicken in the walk in cooler in shallow pans.
  • Observed pineapple in the opened cans. Corrected onsite by transferring it into a food grade container.
  • Observed knives stored in the gaps of the lid of the prep top cooler. Corrected onsite by removing the knives and cleaned.
  • Clean the kitchen thoroughly- coolers, floors especially behind the equipment.
  • Must store personal items/food in a designated area. Label the rack as "personal items" or "employee items."
  • Went over employee health policy and response procedures for vomiting and diarrheal events.
  • A follow-up inspection will be held, but no date was provided.

  • Observed water in the walk in cooler. The manager told that the water (rain water) is from a leak in the roof. Planning to get the leak fixed and also replace the floor of the walk in cooler. Called in the maintenance guy for the reach in cooler.
  • Went over employee health policy and response procedure for vomiting and diarrheal events.
