The Cherokee County Environmental Health Department conducted food service inspections Feb. 22 through March 1 at the following establishments:

• Do not thaw foods in hand sink or block with trashcan. This sink is for hand washing only.
• Dish machine not providing a sanitized dish. Discontinue use until repaired and use 3 compartment sink method.
• Keep wipe cloth solution at proper sanitizer strength.
• All potentially hazardous foods must be cold held at 41°F or less. Do not let food sit out at room temp and then recook when ordered.
• Sort dented cans from working stock and do not use.
• Do not thaw in standing water or at room temp. Use approved thawing method.
• Keep working thermometers in all coolers.
• All food service workers must properly wear an approved hair restraint.
• Keep wipe cloths in sanitizing solution when not in use.
• Post inspection report in approved location. Keep most recent score displayed.
• Do not line shelving with paper or cardboard.
• Repair meat prep sink and use to prep meat.
• Floors/walls/ceiling in need of repair and cleaning in several areas.
• Back screen door is not insect/rodent proof.

• No employee health policy addressing reportable diagnosed illnesses available. Facility has been provided with this information during previous visits. Facility must have policy that includes all reportable symptoms and illnesses required to be reported and guidelines for employees to return to work following illness.
• Employee agreements to report illness are not available. Handouts were previously provided. All employees must sign reporting agreement.
• Facility does not have response procedures for cleanup of illness event in establishment. Obtain copy of procedure at website provided (This form was previously provided).
• Cooked rice in walk-in not marked with 7-day discard. Yum-yum sauce and butter prepared in advance also not date-marked. These items must be properly marked with expiration date.
• Observed cut zucchini being placed back into shipping box. Zucchini was rewashed and placed in clean food containers. Corrected On-Site.
• Remarks: Department of Public Health website was provided to PIC for obtaining copies of Employee Health Information; adjust temp in white, upright unit.
