The Cherokee County Environmental Health Department conducted food service inspections March 20-27 at the following establishments:

Hickory Flat Elementary School (Food Service Inspections)

• No designated Person-in-Charge (PIC) in establishment on arrival. Facilities must have a designated PIC at all times.
• There is an overall lack of oversight of responsibilities of safe food handling. The PIC is responsible for managing these responsibilities.
• Certified Food Safety Manager (CFSM) not present. There is an overall lack of training in food safety knowledge among staff. The CFSM is not fulfilling training/education responsibility of staff.
• Observed employee handle raw chicken and return to pizza make table to prepare food orders without washing hands. Staff must be educated on hand washing practices.
• There is no policy in place for excluding/restricting sick employees. Policies have been provided previously. Obtain and implement employee health policy.
• Hand sink that serves main cook area missing soap and paper towels. Hand sink also heavily soiled with food and grease buildup. Replace soap and towels and clean the sink.
• Facility does not have cleanup policy in case of illness event. Policy has been previously provided. Obtain and implement policy.
• Observed heavy grease/food buildup on multi-use food contact surfaces (can opener, mixer, cooler interiors). These surfaces must be cleaned and sanitized routinely.
• Observed sausage and chicken on counter top at 74°, 75°F. Items discarded. Foods must be held at 41°F and below or 135°F and above.
• Time control implied for pepperoni and cheese pizzas used for pizza by the slice. No times marked and no procedures available. Pizzas at 75°F and were discarded. Times/procedures required before using time system.
• Equipment throughout kitchen are excessively dirty w/grease and food buildup. Cleaning schedule must be established.
• Floors and walls throughout kitchen are excessively dirty from lack of cleaning. Floors in many areas have a black film, walls are splattered with food spills and there is excessive trash under equipment. Establish and maintain cleaning schedule.

• Observed employees wearing gloves without washing hands. observed one of the staff did not wash his hands after coming from outside. COS by washing hands and wearing gloves.
• Observed ice scoop in the ice. Must always store the scoop in upright position.
• Must clean the gaskets of the coolers.
