• Observed improper vertical separation of raw animal foods and ready-to-eat foods. Observed cooked chicken stored below raw beef and seafood. Corrected onsite by rearranging the foods based on the final cook temperatures.
• Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Corrected onsite by discarding some foods that were held more than 4 hours and some foods were kept in the walk in cooler.
• Potentially hazardous food not held at 135 degrees Fahrenheit or above. Corrected onsite by reheating the foods to 165 degrees. Corrected On-Site.
• Observed potentially hazardous food held using time as a public health control with no time marking. Corrected onsite by putting the time stickers.
• Observed sauce containers stored on the floor. Must store the containers 6 inches off the floor.
• Must clean the gaskets and doors of all the coolers. Must clean the vents in the hood.
• A follow-up inspection was indicated to take place, but no date was provided on the form.
