- Observed employee cleaning multiple tables with one cloth, dipping it in one common sanitizer. Tables must be cleaned by one of two methods: 1) sanitizer spray with clean paper towel/table or 2) two bucket sanitizer method. Discussed requirement with PIC.
- Observed eggs at 52F and creamer at 54F sitting on 3-comp sink. Manager had pulled items from walk-in and they had not been placed in refrigeration units. PIC moved items back to walk-in unit for cool down. Do not pull items out and leave at room temperature for extended periods. Corrected On-Site.
- Eggs above grill at 64F and did not have proper any times marked. When using time as control, times must be marked that indicate discard time when items are removed from temperature control locations. Corrected On-Site.
- Pump unit under soda fountain leaking into cabinet and fan unit in walk-in freezer is leaking, resulting in large block of ice down the wall of walk-in. Equipment must be maintained in good repair.
- Food and debris accumulation under equipment at grill and in back area. Improved cleaning needed in these areas.
