• Observed dried food residue on food slicer. Following discussion with manager, it was not known when slicer was last used. Food slicer must be properly cleaned and sanitized after use. Slicer was cleaned on request.
• Prep unit on cook line (next to wall) holding Time/Temp Control foods at 57-64°F. All foods discarded. Small reach in unit at ice machine holding Time/Temp Control (TCS) foods at 63-64°F. All foods discarded. Walk-in cooler air temp at 45-46°F. Multiple TCS foods at temps above 41°F were discarded. Cold, TCS foods must be maintained at 41°F and below. Call service for units. Walk-in freezer door will be opened to cool down walk-in cooler until technician arrives. Corrected On-Site.
• Remarks: dish machine plate 162°F. Recommend that raw/undercooked foods such as beef, eggs, and fish should not be offered less than fully cooked to residents. Food that has been delivered to catering site may not be re-used. Temperature logs should be maintained for catered foods. Sneeze guard does not provide overhead protection at self-service salad bar.
