• Pancake batter held at 54°F with hold time sticker of 9 hours on product. Label later changed to 4 hour hold time during inspection. Correct labels must be in place if time as method of control is in use. Also, no SOP for using time could be found in establishment or on-line. Must keep procedures and records on site and at hand.
• Must post most recent inspection report. Post CFSM and choking poster in patron area.
• Invert/cover plates, bowls, inserts, etc. Store utensils with handle up.
• Do not wet stack containers.
