The Cherokee County Environmental Health Department conducted food service inspections Aug. 1-11 at the following establishments:

• Ambient temperature in walk-in cooler @ 44°F. Food products in storage temp range 43-44°F. Technician called to service unit. Unit must be able to maintain food temperatures at 41°F and below (cooler has recently been serviced and cooling system was replaced according to PIC).
• Reach-in unit in server area is not working. Salsa at 60°F was relocated to working unit. Do not store salsa in this unit unless the unit can maintain product at 41°F.
• Cooked chicken, cooked pork, cooked beans in walk-in at temps of 46-51°F after cooling overnight. All of these previously cooked items were discarded. Discussed cooling procedures with PIC and manager. Time/Temp Control for Safety(TCS) foods must cool from 135-70 in 2 hours and from 70-41 in additional 4 hours.
• Large gap at base of walk-in cooler door. Add foam insulation or cooler gasket. Cold air is escaping unit and this may be a factor in cooler problems.
• Dumpster lids open and trash observed on the ground and on the bank behind restaurant. Keep lids closed and clean up these areas.
• Remarks: Fish for ceviche is farm raised and exempt from parasite destruction.
