• All potentially hazardous foods must be cold held at 41°F or less. Both reach-in coolers in kitchen running at 54°F. Most items thrown away. A few salvageable items relocated to front drink cooler running at 37°F or to freezer.
• Label all bulk food items once removed from original packaging.
• Do not use foods past their expiration dates. Several salad dressings long past their expiration dates in reach-in cooler. Discarded. Corrected On-Site.
• Properly display inspection report and choking poster.
• Any items used as scoops must have handles and handle must stay out of contact with product.
• Invert/cover single service articles. Store kitchen toothpicks with frill end up. Consumer toothpicks must be in a dispenser or individually wrapped.
• Must have sanitizer test strips.

• Sort and segregate dented cans from working stock.
• All scoops must have handles. Do not store knife in between equipment.
• Do not wet stack storage bins.
• Invert/cover single service articles.
• Do not line shelving with cardboard.
• Dish machine temperature gauge must be repaired.
• Breaker for water heater keeps tripping. This must be repaired within 24 hours.
• Several floor and base tiles in kitchen are broken and must be repaired.
