The Cherokee County Environmental Health Department conducted food service inspections May 2-9 at the following establishments:

• Observed in-use chef knives stored against dirty exterior of prep coolers. Knives taken to dish area for cleaning.
• Observed dried meat product on meat slicer. Clean and sanitize thoroughly before use (slicer had been covered with bag).
• Time/Temp Control for Safety (TCS) foods in prep and salad units at temps of 46-55°F. One unit temp was adjusted and some of the items were discarded. Cold, TCS foods must be held at 41°F and below.
• Black film on exteriors of reach-in units and encrusted grease build-up on exteriors of equipment at grill. Establish a cleaning schedule for equipment.
• Trash observed outside dumpster and outside trash enclosure. Trash must be picked up.
• Bulk grease bin is sitting on grass. This bin should be in dumpster enclosure on washable surface.
• Very heavy dirt/grease buildup observed on floor under sinks, under equipment of cook line. Establish cleaning schedule. Replace missing ceiling tiles and replace floor/base tiles.
• Remarks: Keep copy of employee illness/return to work guidelines and obtain copy of emergency cleanup for illness event in facility. Add asterisk to menu to link consumer advisory to items.

• No Certified Food Safety Manager (CFSM) for store. This is a repeat violation. Store must have a CFSM in a management role that is not shared with another store. This must be corrected immediately.
• Person-in-Charge (PIC) does not have access to employee health policy. Policy must include illnesses and symptoms requiring reporting, must include conditions for returning to work and for notifying the Health Authority. Employees must also sign agreement to report.
• Restroom hand sinks have no hot water. Water at hand sinks must be at least 100°F.
• PIC has no access to or knowledge of emergency cleanup for illness occurring in store. PIC must have access to policy.
• Dried food residue observed in produce sink. Employee was directed to clean and sanitize sink.
• Interior cabinet under drink station must be cleaned.
• Lights out in walk-in units. Replace lights.

• No hand washing after handling raw beef and before handling prepared sandwiches (Also observed handwashing in 3-comp sink which was also in-use for washing utensils and food containers). Discussed handwashing and cross-contamination risk with Person-in-charge (PIC). PIC must ensure all staff are following proper handwashing procedures.
• Back doors of truck standing open and several flies were observed inside unit. Must have proper screening in place if opening doors for ventilation.
• Remarks: Also discussed proper use of 3-compartment. Bring only prewashed, ready-to-eat produce on the unit. Hand sink blocked with food warmer. When operating in Cherokee, post Cherokee permit and Cherokee inspection report.
