Restaurant Inspections: "Heavy Presence" of Flies, Mold In Ice Machine

Heading out to lunch or dinner? Get the dish on these Canton and Cherokee County establishments.

The Cherokee County Environmental Health Department conducted food service inspections June 28 through July 6 at the following establishments:

  • No Certified Food Safety Manager (CFSM) certificate available. Must post certificate for one staff member with food management duties. PIC stated "off-shift manager should have his."
  • Existing employee health policy that PIC provided includes influenza symptoms, but does not include symptoms and illnesses required for reporting by GA Food Code. Handouts were provided to PIC and policy discussed with facility administrator. (Also discussed V&D cleanup procedures). New Violation.
  • Observed residue of deli meat on food slicer which had not been in used on day of inspection. Slicer taken to dish area for cleaning. Corrected On-Site.
  • Milk and cut melon in reach in unit at temp of 47-48°F. Items were discarded. Unit cannot maintain food temps at 41°F & below and must be replaced. Corrected On-Site.
  • Dish machine is leaking profusely causing water to puddle throughout kitchen. This must be repaired. (Leak coming from a valve behind machine.

  • Observed food residue on slicer which is regularly used to slice meats. Slicer was disassembled for cleaning. Can opener has metal shaving buildup and must be cleaned. Mold on interior of ice machine. Increase cleaning frequency.
  • Observed several bottles, which looked like water bottles for drinking, containing clear liquid. PIC stated these were chemicals used for cleaning. PIC labeled bottles on request.
  • Inspection report on wall behind POS system. Report must be posted within 15' of the front door and visible to customers at a height of 5-7 feet (approachable at 1 foot)
  • Leak in walk-in cooler must be repaired.
  • Heavy grease coating on stored food packages, shelving and equipment. This must be cleaned. Establish cleaning schedule.
  • Replace missing tiles above walk-in. Facility must improve cleaning in kitchen. Black film accumulating in floors around and under equipment.
  • Heavy presence of flies in kitchen. Improvement needed in control measures.
