• Multiple Time/Temp Control for Safety foods in CrestCore warmer at temps of 127°F to 130°F. TCS foods must be held at 135°F or warmer for hot holding. Items were reheated above 165°F on stove top and warmer temp was adjusted.
• Operator using reduced oxygen packaging (ROP) method for shrimp improperly. Shrimp cannot be held in ROP in refrigerated state without a HACCP plan. Shrimp had been bagged within last 8 hours. Operator removed shrimp from packaging.
