• Wooden shelf in walk-in cooler is not designed to be cleanable and mildew is forming on shelf. Replace with plastic or metal shelving.
• Doors of both walk-in units have broken door latches. Repair the door latches.
• Dish machine water temp only reaching 93°F after several cycles. Minimum wash temperature is 125°F. Call technician or plumber for machine. (Hot water temp OK at other fixtures).
• Continue making needed repairs to broken base tiles. Floors under shelving in walk-in are soiled and must be cleaned. Repair air curtain switch at back door or leave air curtain on continuously.
• Note: When using time system at buffet, times and the disposal of food must be closely monitored and performed correctly.

• Observed food in the walk in cooler left uncovered. Corrected on site by putting lids.
• Observed mold inside the ice machine. Corrected on site by cleaning the ice machine and discarding the ice.
• Observed food stored on the floor in the walk in cooler. Must always store 6 inches off the floor. Corrected onsite by keeping the containers on shelves.
• Must clean the gaskets of the coolers.
• Observed employee items in the bar area. Must store the personal items in designated area.
• A follow-up inspection was scheduled, but no date was provided.

• Observed dirt in the ice machine. Told the manager to clean the ice machine by the end of the shift.
• Overall the facility has to be cleaned thoroughly. Observed floors greasy, gaskets and doors of the coolers dirty, hood covered with grease. Observed buildup of food residue inside the cooler at the milk shake station.
• Observed leak at the hand washing sink. Has a work order.
