• Bins of beef and pork(raw) not covered in walk-in cooler. Items in storage must be covered.
• Observed dried food particles/buildup on slicer that was stored as clean. Employee disassembled slicer for cleaning on request. Corrected On-Site.
• Thermometers missing or not stored in warmest part of unit in several different coolers. Ensure thermometers are provided for all units and placed in the warmest section.
• Walls around drink station in pit side waitress station not designed to meet cleanable characteristics of smoothness and non-absorbency. Contact this office before making changes.
• Floors in front part of kitchen (line, prep and dishwashing) are in poor repair that is preventing proper cleaning. Tiles and grout are missing creating pockets which collect food, grease, etc. Floors in these areas are in need of repair. Contact this office before making changes. Several wall corners are also damaged and need repair.
  Improved cleanup needed under and behind equipment.
