The Convenient Crock Pot

It saves time for busy families.

How many of you have crockpots stuck somewhere in the back of your cabinet that you haven’t used in months, maybe years?

It’s time to take them out and try new recipes.

How can you lose? You pour some ingredients in, turn it on and when you come home from work, your dinner is ready. The best thing is when you walk in the door and smell the wonderful aromas of the meal that’s been cooking all day.

This cajun chicken recipe is one of my favorites. You can pour it over rice or noodles, whip up a salad and you’ve got a great, healthy meal.

Cajun Chicken in a Pot

3 pounds chicken thighs and breasts, skinned
1 cup celery, diced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 cup of sliced mushrooms
1 can tomatoes
1 teaspoon garlic powder
3 tablespoons of sugar
1 teaspoon or more of Cajun seasoning
1/2 teaspoon paprika
salt and pepper to taste
hot sauce to taste
2 cups rice, cooked

1. Place chicken in bottom of crockpot.

2. Except for the rice, combine remaining ingredients and add to crockpot.

3. Cook on high 4 to 5 hours or on low 7 to 8 hours.

4. Cook rice according to package direction.

5. Spoon Creole mixture over hot cooked rice or top some spaghetti with it for a great cajun pasta dish.
