Know Before You Go: Expired Milk, Cooking Oil Stored in Toxic Spray Bottle

The Bartow County Environmental Health Department conducted food service inspections April 14-22 at the following locations:

AJ’S CAFÉ (Food Service Inspections)*

April 14, 2015 Score: 60, Grade: U

• Active managerial control measures are not satisfactory for establishment to be in compliance with code. Corrective action: persons in charge, managers or CFSM must be properly trained or retrained.
• Observed the wrong sink being used for hand washing. Corrective action: discussed with PIC to label hand washing only with signage and a splash guard to separate from prep sink.
• Observed cooking oil in previous toxic spray bottle. Corrective action: dispose of oil; keep food products and toxic products properly separated.
• Observed tea nozzle with severe build up. Corrective action: clean and sanitize nozzles daily.
• Observed dishes stored with splash residue. Corrective action: ewash dishes before use; stored dishes need to be clean.
• Observed heavy grease build up on pans. Corrective action: deep cleaning to remove grease from food contact surface or discard pans.
• No consistant date marking procedure.
• Prepared food not marked with date of preparation or date for disposal.
• Food found stored past disposal date marked. Corrective action: date mark with a 7 day discard with day 1 being the day of preparation.
• Observed toxic substances not separated food products on prep line storage.
• Observed several expired coke products: Coke: 12/27/14; Coke: 4/12/15, 4/11/15; Root Beer: 1/24/15. Corrective action: discard. Spoke with manager about watching dates.
• Observed milk being served past expiration date 04/09/15.
• Observed improper utensil to scoop salsa. Corrective action: coop needs to have a handle to prevent contamination.
  Observed utensil stored in salsa container. Corrective action: with correct utensil, the handle needs to be stored above the top of the potentially hazardous food.
• Observed heavily damaged and soiled cutting board stored for use. Corrective action: discard
• Observed dish machine at 107 degrees Fahrenheit. The machine requires the minimum water temperature to be at 120 degrees Fahrenheit. Corrective action: use extra sanitation procedures until machine is fixed
• Observed heavy food/grease accumilation on walls, floors and equipement in front cook area. No metal container installed for catching grease from hood drip tray.
• Observed front vent hood panel separated with heavy grease build-up. Corrective action: repair panels to help prevent grease build up. Regular cleaning of the grill and hood vent area.

Keep vegetables in smaller, shallow containers to allow proper temperature to hold.
• Observed dish machine at 107 degrees Fahrenheit. The machine requires temperatures to be at minimum 130 degrees Fahrenheit. Corrective action: use extra sanitation procedures until machine is fixed.
• Observed heavily iced fans in freezer. Observed ice accumulation on walls, doors, and floors from condensation. Corrective action: remove ice and have fans kept free of ice build up.
• Observed employee cell phone on prep line. Corrective action: keep personal items in separate area away from food and food preparation.
